Discover Paccheri Mancini , an exceptional Italian artisanal pasta, produced in the heart of the Marche region of Italy. At Mancini Pastificio Agricolo , we make our pasta exclusively with durum wheat that we grow and harvest each year in the fields surrounding our factory , in the heart of the country.
This direct link to the land allows us to obtain a living product , the fruit of the year's harvest, offering incomparable quality and total traceability .
Only two ingredients are used in the composition: durum wheat semolina and water . Our Paccheri are extruded through circular bronze dies , which gives them a rough texture perfect for retaining sauces. They are then slowly dried for 23 hours at a temperature between 36°C and 55°C , in order to preserve the nutritional and taste qualities of the wheat.
Paccheri Mancini are 50 mm long and 30 mm in diameter , and cook in 12 to 14 minutes . Their large and generous size makes them ideal for gourmet and gratin recipes.
