Our FOIE GRAS CREAM (formerly called MOUSSE – same product, new name) is made exclusively with duck and prepared with 60% foie gras , preserving its authentic flavor while giving it a light and creamy texture. By incorporating Monna & Filles blackcurrant cream from Île d'Orléans (https://www.cassismonna.com) , we add aromas of ripe red berries and a robust touch, sure to delight all gourmets!
Instructions for use and storage: Refrigerate three hours before serving. Allow to come to room temperature 15-20 minutes before opening to facilitate unmolding. Open both lids and gently push towards the wider end. The product will keep for 3-6 days in the refrigerator after opening.
Recommended accompaniments: Our Duck Foie Gras Cream is perfect for making appetizers. Spread it on plain or walnut crackers, or use it to make small savory cream puffs filled with foie gras. It pairs well with onion confit, fruit jelly, fresh figs, and pears.
Wines and spirits : Dry red wine, great white Burgundy wines, Pacherenc du Vic-Bilh, Jurançon….
Ingredients : Free-range duck foie gras, milk, fine duck fat, duck liver, eggs, Monna et Filles blackcurrant cream, salt and pepper, spices.
